Portland, Oregon’s new Coopers Hall serves everything on tap—including 37 different wines.

“Wine on tap feels more cowboy,” says sommelier Joel Gunderson, who serves what he believes is the country’s largest kegged-wine selection at the new Coopers Hall. Winemakers often work with him to create unusual small-batch wines for his list, all offered in two-ounce tasting pours. Wine in kegs appeals to his environmentalist side as well. “It’s a green product, with no bottles to throw away. We have 37 wines by the glass, and only one tiny recycling bin.” coopershall.com.
