“Wine on tap feels more cowboy,” says sommelier Joel Gunderson, who serves what he believes is the country’s largest kegged-wine selection at the new Coopers Hall. Winemakers often work with him to create unusual small-batch wines for his list, all offered in two-ounce tasting pours.
