Quinoa Recipes

I recently tested a cookbook recipe using quinoa, a grain that originated in South America, and it reminded me that I should be cooking more of it at home. It is really high in protein and fiber and so easy to make. All you have to do is boil it up in water, like pasta. It only takes about 10 minutes. Once you drain it really well, toss it with some olive oil, salt and pepper or your favorite vinaigrette. Some other great additions are veggies, nuts and herbs. Use it like you would rice, farro or bulgur. Here are some recipes using my new favorite grain.
