Tonight, families around the world will light two candles on the menorah. Celebrate the second night of Hanukkah with Jewish comfort foods like Andrew Zimmern’s family recipe for Chopped Chicken Liver. Though it was traditionally made by Zimmern’s bubbe (grandmother) for the Festival of Lights, the creamy, make-ahead liver spread would be a brilliant addition to any holiday celebration.

Geoffrey Zakarian Named the Next Iron Chef

In Sunday’s finale of The Next Iron Chef: Super Chefs, Geoffrey Zakarian prevailed in a holiday-themed challenge against Elizabeth Faulkner and won the title of Iron Chef. We'd like to think we helped Zakarian prepare for the competition. Back in 2004, F&W challenged the New York–based chef to transform the main ingredients of his complex dishes into rustic, homey recipes such as this creamy Mascarpone-Stuffed Roast Chicken. The dish is just as good at room temperature as it is fresh out of the oven.

Winter Farmers' Markets Are on the Rise

There are now 1,225 winter farmers' markets across the country, announced Agricultural Deputy Secretary Kathleen Merrigan last week. That's a whopping 38 percent increase from last year. This Winter Vegetable-Chicken Paella takes advantage of hearty seasonal produce by combining delicious Swiss chard, butternut squash and leeks with Valencia rice, cured sausage and chicken thighs.

France Headlines the Golden Globes

Nominations for the 2012 Golden Globes came out this morning. Along with Southern-based favorite The Help and George Clooney’s The Descendants, two films in particular made a strong showing—one from the French and one about the French. Woody Allen’s nostalgic Midnight in Paris garnered four nominations, while the black-and-white, primarily silent film The Artist earned six nominations, including Best Director for Frenchman Michel Hazanavicius. Inspired by award season's Francophile twist, we recommend an elegant French dish this evening: Pot au Feu made with tender chicken breasts and winter vegetables.

Cookbook Party with Zarela Martinez & Fany Gerson

At NYC's Sueños restaurant this Sunday, chef Sue Torres will host a cookbook party with five authors including Fany Gerson (My Sweet Mexico), Ted Reader (Napoleon's Everyday Gourmet), Ray Lampe (Dr. BBQ's Big-Time Barbecue Cookbook) and Zarela Martinez, who has published multiple Mexican cookbooks like Food From My Heart. Following the meet-and-greet and signing from 4 to 6 p.m. (with hors d'oeuvres), some of the chefs will contribute to a 7 p.m. Five-course dinner with dishes like Cuban Style Picnics of Pork by Dr.BBQ and Reader's TurDuckPigEn glazed with a spiced-tequila-honey sauce. Martinez is not featuring a dish, but we have her recipe for Pollo con "Chile Seco" (Chicken with Dried Chilies) so you can try her food tonight at home. Reservations for the $75 event can be made through the restaurant at 212-243-1333.

Instead of bread crumbs, chopped almonds add amazing crunch to chicken wings served with a fast and tangy lemon aioli.

Meet Bobby Flay at the F&W Classic in Aspen

The next Food & Wine Classic in Aspen, June 15–17, 2012, will be a 30th anniversary blowout, and tickets are now on sale. Among the all-star tastings, cooking demos and chances to meet chefs—everyone from Jacques Pépin to Giada De Laurentiis—Bobby Flay will host a seminar titled “Parisian Flair, American Flavors.” Here, Flay bakes Honey Mustard Chicken as the centerpiece for a traditional Southern meal with a little French touch: Dijon mustard. He also puts fresh goat cheese in the accompanying grits.

Dean Fearing Guest-Judges "Top Chef"

Last night on Bravo's Top Chef, chef Dean Fearing served as a rather persnickety guest judge, criticizing the contestants' skills as sauciers and their ability to grill. A Southwestern-food expert, the Dallas-based Fearing knows plenty about grilling, but he doesn't always stay true to Texas. Inspired by a trip to Tokyo, Fearing created these grilled chicken skewers glazed with a simply boiled sauce that includes soy sauce, ginger, Sriracha and garlic. It's fast—and so straightforward that even a booted contestant couldn't screw it up.

Hugh Acheson to Divide His “Hughnibrow” for Charity

Top Chef judge and F&W Best New Chef 2002 Hugh Acheson has vowed to split his iconic “Hughnibrow” in the name of charity. Grub Street reports that if the organization Wholesome Wave—chef Michel Nischan's charity, which focuses on making locally grown produce more available and affordable—raises $100,000 by March 1, then Acheson will pluck his upper facial hair. In support of the Georgia-based chef's charitable grooming goal (even if we recommend waxing), we've downsized today's Chicken Dance to a more petite poultry. Quails are so small that Acheson likes to allot two of these flavorful grilled birds per person, with a seasonal spinach-and-pomegranate salad. It's funny how often two is better than one.
