Chicken Parmesan Heros Recipe

If you’ve ever read a comic book, seen a superhero movie or watched a Saturday-morning cartoon, then you’ve probably experienced something created by Stan Lee, who turned 89 yesterday. Spiderman, Ironman, the X-Men and the Fantastic 4 are just some of Lee’s contributions to the comic-book world. To celebrate the man who invented so many heroes, we offer our own Chicken Parmesan Heros. They’re hearty enough to satiate even the Incredible Hulk’s appetite.

Joanne Trattoria, the collaboration between Top Chef Masters alum Art Smith and Joe Germanotta (better known as Lady Gaga’s papa), should open at the beginning of January 2012. This is the first NYC venture for Smith, who owns restaurants in Chicago, Atlanta, Washington, DC and Palo Alto, California. In an interesting bit of fusion, Joanne's dishes will combine influences from Germanotta’s Italian heritage with Smith’s Southern style. To sample Smith’s homestyle cooking now, you can make his recipe for fried chicken, which gets supertender from being marinated twice: first in a brine, then in Tabasco and buttermilk.

Winter Chicken Salad Recipe

After a long weekend of rich dishes, leftovers and Christmas desserts, cookbook author Mindy Fox’s riff on Chinese chicken salad is a fantastically fast way to get a head start on healthy New Year’s resolutions. For a seasonal and colorful twist on the classic salad, Fox replaces the traditional mandarin oranges with blood orange segments.

Slow Cooker Chicken

Today is the Winter Solstice, the shortest day of the year. Rather than mourn thebrief daylight hours, we suggest relishing the extra-long evening with Marcia Kiesel’s recipe for Slow Cooker Chicken with 40 Cloves of Garlic. The three-and-a-half-hour cooking time (with only 25 minutes of active prep) yields cozy, garlicky smells and results in a supertender, intensely comforting chicken stew.

Chopped Chicken Liver

Tonight, families around the world will light two candles on the menorah. Celebrate the second night of Hanukkah with Jewish comfort foods like Andrew Zimmern’s family recipe for Chopped Chicken Liver. Though it was traditionally made by Zimmern’s bubbe (grandmother) for the Festival of Lights, the creamy, make-ahead liver spread would be a brilliant addition to any holiday celebration.

Mascarpone-Stuffed Chicken

In Sunday’s finale of The Next Iron Chef: Super Chefs, Geoffrey Zakarian prevailed in a holiday-themed challenge against Elizabeth Faulkner and won the title of Iron Chef. We'd like to think we helped Zakarian prepare for the competition. Back in 2004, F&W challenged the New York–based chef to transform the main ingredients of his complex dishes into rustic, homey recipes such as this creamy Mascarpone-Stuffed Roast Chicken. The dish is just as good at room temperature as it is fresh out of the oven.

France Headlines the Golden Globes

Pot au Feu

Pot au Feu

Nominations for the 2012 Golden Globes came out this morning. Along with Southern-based favorite The Help and George Clooney’s The Descendants, two films in particular made a strong showing—one from the French and one about the French. Woody Allen’s nostalgic Midnight in Paris garnered four nominations, while the black-and-white, primarily silent film The Artist earned six nominations, including Best Director for Frenchman Michel Hazanavicius. Inspired by award season's Francophile twist, we recommend an elegant French dish this evening: Pot au Feu made with tender chicken breasts and winter vegetables.

Almond-Crusted Chicken

Food & Wine Facebook fans have expressed an interest in more recipes being identified as gluten-free. One of our favorite gluten-free recipes comes from a staff meal at Mario Batali’s Casa Mono. Instead of bread crumbs, chopped almonds add amazing crunch to chicken wings served with a fast and tangy lemon aioli.
