Dean Fearing Guest-Judges "Top Chef"

Last night on Bravo's Top Chef, chef Dean Fearing served as a rather persnickety guest judge, criticizing the contestants' skills as sauciers and their ability to grill. A Southwestern-food expert, the Dallas-based Fearing knows plenty about grilling, but he doesn't always stay true to Texas. Inspired by a trip to Tokyo, Fearing created these grilled chicken skewers glazed with a simply boiled sauce that includes soy sauce, ginger, Sriracha and garlic. It's fast—and so straightforward that even a booted contestant couldn't screw it up.

Hugh Acheson to Divide His “Hughnibrow” for Charity

Top Chef judge and F&W Best New Chef 2002 Hugh Acheson has vowed to split his iconic “Hughnibrow” in the name of charity. Grub Street reports that if the organization Wholesome Wave—chef Michel Nischan's charity, which focuses on making locally grown produce more available and affordable—raises $100,000 by March 1, then Acheson will pluck his upper facial hair. In support of the Georgia-based chef's charitable grooming goal (even if we recommend waxing), we've downsized today's Chicken Dance to a more petite poultry. Quails are so small that Acheson likes to allot two of these flavorful grilled birds per person, with a seasonal spinach-and-pomegranate salad. It's funny how often two is better than one.

Over the weekend, NPR commentator Bonny Wolf discussed the many "meatballeries" opening across the country. She's not shocked: "Meatballs are affordable and familiar. They’re a happy food in hard times." We're not surprised either, because meatballs are delicious and supereasy to make at home. This Chicken Meatball and Orzo Soup combines the restorative properties of chicken soup with homey meatballs made from chicken sausage to create a fast and ultra-comforting meal.

Martha Stewart’s chickens are almost as busy as she is. The Wall Street Journal’s interactive guide to a day in the life of the media mogul reveals that the 200 chickens on Stewart's upstate New York farm produce enough eggs to supply her show, office kitchen and staff, who can take eggs home. While farm eggs are wonderful at breakfast, F&W's Kristin Donnelly likes to turn them into a light Francophile lunch (also great for dinner). Her recipe for Eggs Baked Over Sautéed Mushrooms and Spinach, paired with a glass of juicy Beaujolais, makes a filling meal for less than 600 calories.

Quest Loves Fried Chicken

When he's not drumming with the Roots on Late Night With Jimmy Fallon, Questlove wants to sell fried chicken from food trucks. According to Adweek, Questlove got the idea on the West Coast. "So at three in the morning, I'm watching these people kill all this Mexican corn. And I was like, Man, I want a food truck," he told the publication. His Philly-based start-up, called Quest Loves Food, will focus on Lancaster County fried chicken drumsticks for now, but the idea could lead to a fleet of trucks that caters to music festivals. The basics of any great food truck food: Make it delicious and portable. F&W's fried chicken kebabs start with ground chicken rolled into balls and fried, then served on skewers. Even if Quest doesn't take our suggestion, this fast recipe makes great holiday party food.

Japan's World-Class Comfort Food

As of this week, Japan holds more Michelin stars than France—even though the guide is published in France. Thirty-two Japanese restaurants earned the maximum three-star rating for 2012, while just 25 French restaurants received the honor in the most recent guide (the next version comes out in February). While these high-end restaurants are among the many reasons Japan makes an incredible destination for food lovers, the country also has an incredible knack for comfort food (see: ramen, tempura and soba). This recipe for Stir-Fried Udon Noodles with chicken, shrimp and vegetables from Chicago Chef Takashi Yagihashi makes a great intro for the home cook.

The Huffington Post reports that a Vermont artist whose home screen-printing business is built around the slogan ’Eat More Kale’ is under attack from the fried-chicken chain Chik-fil-A. The company claims that Bo Muller-Moore’s veggie-friendly catchphrase is too close to its own trademarked ’Eat Mor Chikin.’ We see no reason why the two slogans can’t live happily together, just like chicken and kale do in Grace Parisi’s Roasted Chicken Legs with Potatoes and Kale. The chicken’s meaty juices infuse the dark greens, creating a delicious and harmonious one-pan meal.

These cacciatore-inspired chicken thighs are quickly braised in red wine vinegar instead of red wine, which cuts down on calories while retaining flavor. The chicken browns nicely and the vinegar reduces to a delicious glaze, for a meal that's done in 30 minutes.

The December issue of Men’s Health, which hits shelves today, names Pittsburgh’s Primanti Bros. as the manliest restaurant in America because the Pennsylvania staple stuffs sandwiches with side dishes like coleslaw and french fries. According to the magazine, this allows the eater to "perform some sort of manual labor with your right hand and eat with your left." We’ll keep the fries on the side, but adding crisp, creamy coleslaw to sandwiches like this North Carolina barbecue–inspired Pulled-Chicken Sandwich makes for a match made in (healthy) manly heaven.
