Miami chef Michael Schwartz shares his delicous lamb recipe, served with a vibrant pesto made with healthy, nutty-tasting hemp seeds.
Since he opened Michael’s Genuine eight years ago, Michael Schwartz hasn’t worried whether body-conscious Miamians will eat his lamb meatball pizzas and sweet-spicy pork belly—he’s just served them. A best seller when it’s on the menu is his leg of lamb marinated in garlic-lemon yogurt; as the meat roasts, the yogurt chars to form a delicious, sticky crust. Alongside, Schwartz offers a bright green pesto spiked with an unusual addition: hemp seeds. “People get excited about hemp seeds because they’re so healthy,” he says. “To me, they just taste good.” He’ll serve a version of the lamb at his upcoming waterfront restaurant in Miami’s Paraiso Bay, opening in the next year.
