Born and Raised: Milford, Connecticut

Background: After high school, I worked as a dishwasher at a local steakhouse at night while working on an oyster boat during the day before deciding to attend the Culinary Institute of America in Hyde Park, New York. I worked in restaurants in New York City and upstate New York, Martha's Vineyard, Houston and Memphis. I started freelancing at Food & Wine while waiting to help a friend open a restaurant, which never happened, and I ended up taking a full-time job in the Test Kitchen.

What I Do at Food & Wine: The Test Kitchen staff and I figure out other cooks' recipes, prepare them and see if they work. If not, we make them work. Then we write up our recipe changes in meticulous detail, after which the food editors question us and question us again to make sure everything's perfectly clear and accurate. On the fun side, we cook, eat and evaluate food just about all day.

How I Relax: I live in a tiny beach cottage, where I garden and fish on my days off.

Favorite Cheap Eats: I take great delight in bringing people to the original Pepe's Pizzeria in New Haven, Connecticut, and turning them on to the classic white clam pie.

Books: In 1992, I co-authored (with Binh Duong) Simple Art of Vietnamese Cooking (Simon & Schuster).
