4 Ways to Use Leftover Vinaigrette

The next time you make vinaigrette (using this foolproof method from cookbook author Melissa Clark), make extra, because vibrant dressing is great drizzled on more than just salad. Here, four versatile vinaigrettes and the best dishes other than salad to make with them.

Balsalmic Vinaigrette
The flavorful dressing is bold enough to drizzle on grilled sausages. It can also be used instead of mayonnaise in tuna melts.

Scallion Vinaigrette 
The herbaceous, piquant vinaigrette is perfect for dipping sweet, steamed artichoke leaves. It also makes for terrific pasta sauce on a summery crab linguine.

Lemon Vinaigrette 
Bracing lemony dressing is a perfect sauce for herb-crusted leg of lamb as well as crispy trout fillets.

Tomato Vinaigrette
