America is experiencing a caviar rennaissance. Here are top selections from five producers who ship their excellent caviar nationwide.

Atlantic Caviar & Sturgeon Company, North Carolina
This farm and research center specializes in osetra. $45–$90 for 1 oz.;

Fish Breeders of Idaho
Fisherman Leo Ray produces almost 2,000 pounds of caviar per year. Chef Chris Gawronski at Chicago’s Henri is a fan. $60 for 1 oz.;

Mote Marine Laboratory, Florida
Housed in a cutting-edge aquaculture research center, Mote Marine Laboratory was the first to farm Siberian sturgeon (as opposed to the more common California white sturgeon). $65 for 1 oz.;

Sterling Caviar, California 
America’s largest supplier, Sterling offers three grades of California white sturgeon caviar (rated by size and color) and supplies high-end purveyors like Petrossian. $70–$117 for 1 oz.;

Tsar Nicoulai Caviar, California
