How to Survive on Bacon

F&W asked chefs around the country how they would prepare for an apocalyptic situation, à la The Road. Some went for luxury goods—others focused on survival.

Seattle chef Josh Henderson is used to cooking on the go. He is the owner of Skillet Street Food, a vintage Airstream trailer serving nostalgic American foods like crispy fried chicken sandwiches and burgers topped with bacon jam. His emergency supplies list is simple: A skillet, his 8-inch Sabatier knife, onions, rice and thick-sliced bacon. “If I’m stuck in the wilderness, I want something to fill me up,” Henderson says. “With bacon and rice I could make some sort of hash.”
