Dana Cowin's Food Flight Plan

Dana Cowin's Flight Plan

Chicken and wild rice soup at Travail Kitchen and Amusements.

Every year Food & Wine compiles the Go List, our guide to the world's most exciting food destinations. Here, editor in chief Dana Cowin creates her own mini version with the top three places she'd like to visit next.

1. Minneapolis
Visiting TV chef Andrew Zimmern and his wife, Rishia, trying some of their favorite new spots: Travail Kitchen and Amusements, which Andrew says is "stellar in every sense;" Burch, a new steak house from chef Isaac Becker, with "mind-blowing bone marrow dumplings"; and The Rabbit Hole, for "stoner Korean."

2. Lima, Peru
Tasting the food of international superstar Gastón Acurio. His flagship has reopened in the colonial-era hacienda Casa Moreyra, one of the most important pieces of architecture in the city. His wife's chocolate shop, Melate, is also a must-visit. I want to get a taste of Nikkei cooking—a blend of Peruvian and Japanese—like the pork belly at Mitsuharu Tsumura's Maido. And I can't wait to stay at the gorgeous new Arts Boutique Hotel B.

3. Tokyo
Discovering the secrets of the world's best food city. I'll head straight to chef Zaiyu Hasegawa's Den for beautiful, fun, kappo-style (counter) dining and dishes like the extraordinary salad above. Next I'll go to the elegant, French-inflected Tirpse (esprit backward) for one of the tasting menus. I also promised my son that I'll do a ramen scouting tour, and then bring him back with me to try the best.
