Getting a chef to pick a favorite cookbook is like asking a parent to choose her most-loved child. But F&W pressed great cooks around the country to reveal their top picks of all-time.

The Book: Alfred Portale’s Gotham Bar and Grill Cookbook by Alfred Portale, 1997

“The first cookbook that I ever picked up was Alfred Portale’s Gotham Bar and Grill Cookbook. I was probably 19 at the time and I didn’t even know some of the ingredients in that book even existed,” Poli says. “It really opened me up to the culinary world—to the chefs, their restaurants, their creativity with presentation. Before, I was just putting food on a plate.”
