The fourth annual MAD Symposium just wrapped up in Copenhagen, and as usual it was packed full of brilliant ideas. Put together every year by René Redzepi’s nonprofit MAD organization, the symposium features incredible talks from innovative chefs, producers and food intellects about the future of food and the current state of the industry. This year, the roster of speakers included Roy Choi, Daniel Patterson, Chris Cosentino and the legendary Alain Senderens.

The biggest news from the symposium came this morning when Patterson and Choi revealed that they will be teaming up to launch Loco’l, a new fast food concept, which will open its first location in San Francisco in spring 2015.
