After a night on the line, most chefs have a go-to drink, from cheap beer to a house bartender’s expert cocktail. Here, star chefs reveal their favorite drinks.

Chef Sonja Finn, of Pittsburgh’s Dinette, will take a Maker’s Mark Manhattan but she also likes it when bartenders are willing to shake their moneymakers—a.k.a. their cocktail tins. “I’ll have anything with an egg white in it if there’s a mixologist around who is willing to really shake that thing,” she says. “As for wine, I think that Chianti Classico is a perfect food wine, and I love anything from the Rhône Valley. I don’t like to spend a lot of money on wine, so in terms of bang for your buck, I am a huge fan of sparklers from California.” Finn isn’t big on beer, but she does keep Miller High Life ponies around in case a barbecue breaks out. “I only like very cold beer,” she says. “And those are just seven ounces so they don’t have time to get warm.”
