Suzanne Goin is having a hectic few weeks. On tour for her awesome and brand-new A.O.C. Cookbook, the L.A. chef (and F&W Best New Chef 1999) has been travelling to cool places around the country. Thursday afternoon, she stopped by the F&W Test Kitchen; she’d been at the Spotted Pig the night before, hosting a party on the V.I.P. 3rd Floor for people like Alice Waters. Afterwards, she ate in the restaurant where several of her dishes were featured on the menu. (She had the Pig’s renowned burger.)

Here, a few highlights:

On a great, fast Thanksgiving appetizer from the A.O.C. cookbook: Bacon-wrapped dates with Parmesan. (It’s often described as ‘meat candy.’)

On her kids’ favorite LA restaurant: Pizzeria Mozza. “My kids are obsessed with it. The first time they went, the chef Matt Molina took them to the kitchen and let them taste all the gelatos. Now they tell all their friends to go get the gelato tasting. We potty trained my son Jack by telling him he could go to Mozza if he started using the toilet.”

On her newest obsession: 3-D coffee. “At A.O.C., one of our busboys, Jesus, has started doing elaborate latte art. Just with steamed milk. Obviously he has a lot of free time on our hands.” (Goin likes to show off an Iphone pic of an amazing Hello Kitty foam sculpture.)

On the A.O.C. cookbook dish that all the chefs want to put on their menu: Pork Cheeks with Polenta, Mustard Cream and Horseradish Gremolata (The Spotted Pig featured it on their A.O.C. guest menu).

On the Women Chef’s Controversy: “Three male chefs on the cover; that doesn’t bother me. But Alice Waters, with her influence, what she represents; she should have been on that list. I could have been on the Alain Passard tree – I worked for him. Amanda Cohen’s take was right on – it’s a list from someone who meets the same people over and over again, and they’re all men.”

On the Kanye West After Party, which took place right after her party on the Pig’s 3rd Floor: “Basically, we were Kanye’s Opening Act.”
