Chef Shuffle: The Latest from Chicago

It looks like the Best New Chef Shuffle will extend to spring '08. Graham Elliot Bowles, a Best New Chef 2004, will be leaving Avenues at the Peninsula Chicago at the end of March to open his own restaurant in Chicago's River North Gallery District, named, what else, Graham Elliot. "We're leaving the four-star world as you know it," says Bowles. Or more succinctly, it'll be "bistronomic," he says. Translation: dishes like risotto with nine-year-old cheddar and Pabst Blue Ribbon-braised pearl onions crusted with Cheez-Its, servers in Chuck Taylor All-Stars and Levi's 501 jeans, plus illustrated menus and guitar music by none other than the chef himself (Graham Elliot sings, too, but will spare you that). Rocking indeed.
