To find these excellent up-and-coming cooks, Food & Wine editors sift through hundreds of nominations from our trusted network of sources around the country; then we start traveling and tasting. Every year, we notice a trend that amazes us, and this year we’re delighted by the number of talented young (26- and 28-year-old!) chefs who have opened up tiny (22-seat!) places. They are intensely personal restaurants that are true labors of love.
