Where are they now?

Pope shuttered Boulevard Bistrot in 2004, 10 years after she opened it, and opened a new restaurant, the Mediterranean-influenced t'afia. There, her commitment to sustainable practices is evident in everything from the locally sourced ingredients to the weekly farmers' market she hosts in the parking lot. She plans to open Beaver's, a barbecue restaurant, in the fall of 2007. Pope also designs home kitchens with three other Houston chefs, including fellow Best New Chef Scott Tycer.

Other projects: Beaver's, beavershouston.com; Chef's Design Collaborative, Tuscan One Town Homes, 713-266-4695 or www.tuscanone.com.
