In choosing wines for his dinner party, Sascha Lyon conferred with his friends Alexander Adlgasser, sommelier at Jean Georges in Manhattan, and Jean-Baptiste Caillet, captain at Balthazar. What they came up with is versatile: both the first-course whites and the main-course reds can be served throughout the meal, up to dessert.
