Shabu At this mod restaurant, which glows like a red Chinese lantern at night, the "freestyle" Asian cuisine is prepared by chef Bob Valaika, who trained with Nobu Matsuhisa and was previously at Matsuhisa Aspen. Go for the beef or pork pot stickers, the seared scallops with mango-studded fried rice and, for dessert, a chocolate martini, black as night.
