America's two most famous Japanese chefs are expanding their eponymous empires. At Nobu Fifty Seven, Nobu Matsuhisa's new Rockwell Group–designed midtown restaurant, the private dining room is decorated with sea urchin shells (40 W. 57th St.; 212-757-3000). At Morimoto New York, Masaharu Morimoto (a.k.a. Iron Chef Japanese) will fly in fish from Australia, South America and, of course, Japan (75 Ninth Ave.; no phone yet).
