* Share the work. Having different members prepare different courses takes a great deal of pressure off the hosts.
* Vary the themes. Sicilian, Indian, Mexican, sure--but how about a dinner built around truffles or garlic, or a black and orange dinner for Halloween?
* Set up a reasonable schedule. In the first flush of enthusiasm you may think you want to do this every weekend, but once a month is about right for most people.
* Remember, you're in this for fun. You aren't cooking at a restaurant, and no one is going to hate you if the soufflé falls. The point of a club is for friends to get together, eat well and have a good time.
