For Vietnamese dishes, Mark Ellenbogen, the Slanted Door sommelier, often suggests Rieslings, particularly the lightly sweet German ones designated Kabinett. "There's a sort of synergy—the wine will taste brighter and livelier than it would on its own, and the food tastes better, too," Ellenbogen says. Despite his passion for Riesling, Ellenbogen is happy to suggest other varietals when appropriate. "German Riesling doesn't really pair well with garlic," he notes; for that, Austrian Grüner Veltliner makes a good match.
