Italians will cook a whole pig on a spit, but there's an easier way

One of the world's great earthy foods is porchetta, a whole spit-roasted pig soldat rotisserie trucks in Italian markets. To get the same aromatic meat at home, I marinate a fresh ham and roast it in the oven until it's meltingly tender. You will need to season the fresh ham the day before you plan to cook it. The total roasting time is six hours.
