Turn the crab upside down. With scissors, cut off the face. Remove the brain sac from behind the eyes.
Lift up the "apron" from the abdomen of the crab and cut it off where it joins the body.
Turn the crabs right side up and lift each flap where the shell comes to a point; pull or scrape off the spongy gills.
