Blackberry Farm is outside Knoxville, Tennessee, on the edge of the Great Smoky Mountains National Park, which is famous for wildflowers, so I put a wildflower guidebook in my pocket and headed out for a walk. I saw dozens of blossoms I'd never seen before--I could not believe that orchids grow wild here! The plants in the park are protected, but near the inn we picked common field flowers for the dinner table; they were just right for chef John Fleer's foothills cuisine, part rugged, part refined, all delicious. --Stephen Scoble
