Domaine Charbay uses nearly 20 different kinds of fruit to make most of its drinks. Some, like Pastis, are made with an array of spices. A few of the products and their ingredients: Nostalgie Black Walnut Liqueur ($75). The Karakasevics get walnuts from a neighbor on Spring Mountain in exchange for a few bottles of the finished product. Then they macerate the nuts in a triple-distilled brandy made from Napa Valley Pinot Noir grapes. Pastis ($50). Domaine Charbay's tribute to the famous French aperitif is made with French, Moroccan and Chinese anise seeds and 18 other botanicals. Grappa di Marko ($75). Napa Valley Merlot is distilled and then aged for eight years before bottling. Distillers' Port ($75). California Cabernet and Syra hare fortified with five different Domaine Charbay spirits.
