When choosing wines for a buffet, consider the dominant flavors, then pick a white and a red that can match the broad range. Nancy Silverton's Mediterranean-inspired menu has garlicky and smoky notes. So Randy Clement, who worked with Silverton at Campanile, and is now a partner in Los Angeles' Silverlake Wine, suggests serving an aromatic, medium-bodied white, the 2002 Sportoletti Grechetto Assisi, from Italy's Umbria region, and a spicy Syrah from California, the 2002 Melville Estate Syrah. If these prove hard to find, two good alternatives are the crisp 2003 Antinori Orvieto Classico Campogrande and the robust 2003 Rock Rabbit Central Coast Syrah.
