ABAGADASSETT RIVER
Hayward's neighbor Brenton Zachau brings him mild-flavored smelts in winter. Fishermen like Zachau gather in shacks on frozen lakes and streams, dropping lines through holes in the ice. "It's almost a social event," Hayward says. DETAILS Jim's Smelt Camp, Bowdoinham; 207-666-3049.
Mussels
CASCO BAY
Hayward buys mussels from Bang's Island Aqua Farms, a small company that operates in Casco Bay. Owners Craig Tanner and Tollef Olson share Hayward's dock; in return, Hayward gets first pick of the mussels they bring in each week. DETAILS $8 for 2 lbs; 207-329-2654.
Pork
NORTH ANSON
Sam Hayward loves the luscious pork he gets from Arnold Luce's farm in North Anson. On his 200-acre, 111-year-old farm, Luce raises cattle and pigs without using hormones, which explains why his pork (including loin racks, tenderloins and bacon) is so exceptional. "Arnold's butcher is probably the best in the entire state," says Hayward. DETAILS Luce's Meats, 366 Embden Pond Rd.; 207-635-2817 or mainefarmsbrand.com.
