How to Clean Soft Shell Crabs

  • Turn the crab upside down. With scissors, cut off the face. Remove the brain sac from behind the eyes.
  • Lift up the “apron” from the abdomen of the crab and cut it off where it joins the body.
  • Turn the crabs right side up and lift each flap where the shell comes to a point; pull or scrape off the spongy gills.
