To prepare any of the barbecued meats that follow, you'll need a covered charcoal grill or a smoker, a thermometer, one 20-pound bag of hardwood charcoal and several cups of hardwood chips. All of the meats are marinated overnight and sprinkled with a seasoning rub before they're cooked. As the meats cook, they're spritzed with mop spray to keep them moist; at the very end, they're brushed with homemade barbecue sauce. The cooking times may vary slightly, based on your particular grill or smoker, the amount of meat you're preparing and the climate you're in. There are only a few things the griller needs to do during cooking, but he needs to do them regularly: add fresh, smoldering coals to the fire to maintain the heat at a fairly constant 225°, rotate the meats and spritz them with mop spray.
