The Sustainable Seafood Initiative (SSI), part of the South Carolina Aquarium in Charleston, focuses on protecting local marine populations and offers fact sheets on indigenous animals, a printable wallet-size list of conservation-minded restaurants throughout South Carolina’s low country and recipes from restaurant partners who have met SSI’s criteria for sustainability (which include a commitment to remove population-challenged fish like Chilean sea bass and shark from their menus).

A leader in ocean-conservation advocacy, California’s Monterey Bay Aquarium is green through and through. Its researchers study everything from sea turtle migration patterns to the jeopardized fate of southern sea otters, and they publish “Seafood Watch,” a pocket guide to making smart choices that benefit oceans and consumers. Their multidimensional approach to sustainability extends to their building practices, as well: They use green con-struction materials, are committed to recycling and clean with green products whenever possible.
