Wine and low-fat meals are a good match. The government recently made it official with the announcement that a glass a day (or two, for men) can be part of a healthy diet. And there are other benefits: five ounces of Chardonnay or Burgundy, at about 100 calories, gives an impression of richness to a meal without adding any fat. Best of all, matching wines to low-fat dishes is easy; it requires only that the wine complement the flavors of the food. Fattier dishes are trickier to match because they need wines that can cut through the unctuousness of the food, such as a white with an acidic edge or a red with a tannic bite.
