Olive paté: A rich, complex-flavored spread made from a combination of olives, including both Niçoise and cured varieties such as lemon-fennel and mountain-herb. Harissa: A puree of chile peppers and olive oil. The Mahjoub version is drier and coarser than the traditional sauce. Orange marmalade: Made with orange slices in thick syrup, it's more like a confit than a marmalade. Delicious on buttery whole-grain toast.
