Baking guru Alice Medrich, who just published Pure Dessert, adds a secret ingredient to the dough for her crisp chocolate tuiles: Parmesan cheese. It enhances the flavor of the chocolate without making the cookies taste weirdly cheesy. The ideal wine pairing: a 10-year-old Malmsey Madeira.
