When the Fairmont Mayakoba opens this month on Mexico's Caribbean coast, it will be the first of five luxury hotels slated to launch in the resort area known as Mayakoba, about 40 miles south of Cancún. Besides its 401 rooms and 16,000-square-foot spa, the Fairmont Mayakoba will include three restaurants headed by chef David Andrews, focusing on Latin- and Caribbean-style dishes like seafood seviche with mango and papaya. Yaukuve / Fiji
Opening in spring 2006, the private island resort of Yaukuve will have 21 bures—thatched-roof cottages—on four pristine beaches. In the main restaurant, chef Stephen Pope will serve dishes like tuna carpaccio with coriander tomato salad. The staff can also set up a beach barbecue, complete with a personal griller.
