LOOK for wonton skins, also called wonton wrappers, in the refrigerated produce section and the freezer section of supermarkets and Asian markets. They usually come in 12-ounce transparent plastic packages containing 50 or more sheets.
In Chinatown stores and some supermarkets, thinner wonton skins are sometimes available; a package of the thinner skins contains almost twice as many sheets per comparable weight--about 100 in a 12-ounce package. The thin skins are rarely labeled as such, but they may have a black dot on the package or be called siu mei skins. These more delicate wrappers suit light fillings, such as the seafood mousse in the Scallop Dumplings with Garlic Chives. The thicker, chewier skins are sturdy enough for any meat or vegetable stuffing.

STORE wonton skins in the refrigerator for up to 10 days, or freeze them in airtight bags for up to two months; defrost overnight in the refrigerator.
