The following ingredients are staples in Anatolian households. They are available at Middle Eastern groceries or by mail order from Kalustyan's (212-685-3451).
* Turkish mini brown lentils are smaller than our common lentils. They have a distinctive flavor and hold their shape during cooking. Any mini lentils can be used in their place--Indian whole masoor dhal, Spanish Pardina lentils or mini brown Egyptian or Ethiopian varieties.
* Turkish red pepper flakes are coarsely textured and mildly hot. They can be dark in color and intensely aromatic or bright red with an almost berrylike flavor.
* Turkish red pepper paste is hot and vibrantly flavored. It's made with seeded and chopped hot and sweet peppers that are tossed with salt and spread out in large shallow pans to dry under a hot sun for a week. Look for Selin or Melis brands.
