Herbsaint Brandy Milk Punch. In a large bowl, mix 2 quarts cold milk with 1 cup brandy, 1/2 cup Herbsaint or Pernod and 1/2 cup confectioners' sugar; stir to combine. Add more sugar or brandy to taste. Strain into a pitcher and serve cold, topped with freshly grated nutmeg.
Indian Spiced Cider Punch. Brew 3 cups of strong Darjeeling tea. Strain the hot tea and add 8 crushed cardamom pods, 2 teaspoons grated fresh ginger and 2 crushed cinnamon sticks. Let cool, then strain again; refrigerate. In a punch bowl, mix the cold tea with 3 cups diced crisp apples. Pour in two 750 ml bottles of sparkling apple cider. Add Calvados or brandy to taste and serve cold.
