While waiting for graduate school to begin in 1980, Giambattista Cilia’s father gave him and two friends a few tons of nero d’avola grapes for winemaking. The first vintage bonded the three, who promptly founded the COS Winery. More than 30 years later, the greatly expanded winery on the southeast coast of Sicily is renowned for both its specialty vintages like cerasuolo di Vittoria and production techniques. Visitors are welcome to stay the night at the on-site inn.
