Foster & Dobbs Authentic Foods
Tim Wilson and Luan Schooler opened Foster & Dobbs in 2005, naming their specialty shop in Northeast Portland for Tim’s grandfather, Wilbur Foster, and Luan’s mother, Leta Dobbs. The establishment features refrigerated cases, packed shelves, and recent offerings hand-scrawled on rolls of butcher paper. The shop specializes in cheese and cured meats from Seattle’s Salumi and Berkeley’s Fra’Mani Handcrafted Salumi. Prepared foods include seasonal soups, salads, and sandwiches like the bánh mi (country pork pâté, pickled vegetables, Sriracha mayo, and jalapeno jelly) and a tuna melt with Oregon albacore, preserved lemons, capers, olives, Beecher’s Flagship Cheddar, and Dijon mustard.
