Located in Seattle’s historic Pike Place Market, Beecher’s Handmade Cheese is sometimes called a “living museum” where visitors watch 21st-century cheese makers use 5,000-year-old recipes. The wood floors, white shelves, and silver milking cans along the wall give Beecher's a farm-house quality. The shop sells both its own hand-made cheeses as well as American artisanal varieties (all made west of the Mississippi, with most from the Pacific Northwest). The market’s waterfront locale can be cold, so head into Beecher’s adjacent café for hot paninis, soups, and the legendary mac and cheese. Fresh-from-the-vat, warm and squeaky curds are sold on the shop’s café side, too.
