Tall, blond southern boy Rory Dunaway might not seem the obvious choice to unravel the secrets of Mexican gastronomy, but the new recreational kitchen’s chef de cuisine has a way with a flan pan. Formerly of the Amelia Island, FL, Ritz-Carlton, Dunaway teaches students to prepare ceviche, red snapper Veracruz-style, lime flan, and other Maya and Mexican dishes. A “real Mexican” and an outdoor grilling program, each $115, are offered twice a week for two hours.
